The town of Aubonne can easily be recognised by the round, white tower that looks out over the surrounding vineyards. Here, wine-growing is an authentic tradition, with no fewer than 79 hectares under production. The entire region rests on a substratum of moraine, with silt and clay giving a special character to the grapes. The wines are round and full-bodied and the soil adds a dominant firm note and a slightly chalky astringency. The bouquet of the local Chasselas is pronounced, with a spicy aroma like that of a basket of dried fruit.
